An excellent source of minerals, especially iron, calcium, magnesium and iodine, as well as many vitamins, sea vegetables are reputed to contain 10-20 times more nutritionally dense than land vegetables. Nutritionist Choice’s aim is to provide the finest top quality sea vegetables which contain higher nutrients, are sweeter in taste and more pleasant in flavour. Nutritionist Choice’s Mekabu is the sporophyll of wakame which is the thick part close to the root and 20% richer in minerals and phytonutrients than its leaf and stem, yet it is very low in calorie, fat and is cholesterol free. A sticky substance in mekabu, called fucoidan, is believed to promote digestive health, immune response and inhibit tumor growth.

Preparation
Soak mekabu in cold water for 30 minutes then drain off the water. The mekabu, remains crunchy in texture, is now ready to make a seaweed only salad or can be mixed together with other salad leaves by combining vinegar and a small amount of oil with soy sauce and seasoning to taste. It can also be served as a condiment on top of traditional noodles and broth, cooked rice or sushi rolls. Mekabu is usually eaten raw or simply added toward the end of cooking as fucoidan is believed to be more beneficial in raw mekabu.
